Krispie Peach Parfait

Make your next dinner party dessert for under $20 with these refreshing parfaits!

  • 2 tins of Peaches, drained
  • 1 packet of Griffin's Krispie biscuits
  • 300ml Cream
  • 160g Greek Yoghurt
  • 3 Tbsp Icing Sugar
  • 1 tsp Vanilla Essence
  1. Crush the Krispie biscuits in a food processor until they resemble fine breadcrumbs.
  2. In a large bowl, whisk together the cream, yoghurt, icing sugar and vanilla for 2-3 minutes or until forming soft peaks.
  3. In 4 glasses or ramekins, layer your parfaits starting with the crushed biscuits, followed by the cream mixture, and then peaches. Repeat until your glasses are full and top with a dollop of cream and sprinkle of biscuits.
  4. Serve straight away or store in the fridge for less than 8 hours before eating.
