Griffin's Valentine's Day Icing

  • 1 packet of Griffin’s Cookie Bear Shewsbury biscuits
  • 1 tbsp Icing Sugar, for sprinkling


For the Royal Icing: 

  • 1 Egg White
  • 2 Cups Icing Sugar
  • 1 tsp Lemon Juice
  • Red Food Colouring



Pick out the heart Shewsbury biscuits. Lay biscuits on a chopping board or plate.


To make the icing:

  1. Using an electric mixer, whisk egg whites until light and frothy.
  2. Gradually add sifted Icing Sugar and lemon to egg white.
  3. Beat at a high speed until light and fluffy, thick and shiny, and add food colouring until preferred colour!
  4. Fill a piping bag with mixture and pipe onto bikkies.
  5. To finish, sprinkle the remaining icing sugar over the biscuits.
