Strawberry No-Bake Cheesecake with Pistachio Praline

Ingredients
- 1 packet of Griffin's Waffle Caramel Spice biscuits, crushed
- 100g Unsalted Butter, melted
- 250g Strawberries
- 250g Cream Cheese (full fat) at room temperature
- 395g Sweetened Condensed Milk
- 150mL Cream
- 1 tsp Vanilla Extract
- 1 tbsp Lemon Juice
- 1 tsp Powdered Gelatine, dissolved in water
- ¼ cup Icing Sugar
- Fresh Mint to serve
Praline
- ½ cup Caster Sugar
- 1 tbsp Water
- 50g Pistachio Nuts, roughly chopped
- 1 pinch Sea Salt
Instructions
- Line a 30x18cm slice pan with baking paper.
- Combine the crushed biscuits and melted butter in a bowl and mix until evenly coated. Tip into the prepared pan press firmly to form an even base. Chill in the fridge while you prepare the filling.
- Chop half of the strawberries into small pieces and set the others aside.
- In a large bowl, beat the cream cheese until smooth.
- Add the sweetened condensed milk, cream, vanilla extract, lemon juice and dissolved gelatine. Beat until thick and creamy.
- Gently fold through the chopped strawberries.
- Pour over the chilled base and smooth the top. Cover and refrigerate for at least 6 hours, or overnight, until set.
- For the praline, line a baking tray with baking paper. Add the caster sugar and water to a small pan over medium heat. Cook without stirring until the sugar dissolves and turns a deep amber. Quickly stir in the pistachios and salt, then pour onto the tray and spread thinly. Cool completely, then smash into small pieces.
- Toss the remaining strawberries in a little icing sugar.
- Cut the cheesecake into squares and top with the strawberries (sliced or whole), pistachio praline and mint leaves.
Serves 12
Tip: To dissolve gelatine, place a small amount of cold water in a cup and sprinkle the powder over. Leave it to sit for a few minutes and then sit the cup in a small bowl of warm water (a water bath) until it completely dissolves to a clear liquid. Take care not to overheat.
